Tasting and organoleptic control, Providing consulting support and assessments

Advisory support

Based on many years of experience in the food sector and driven by respect and concern for the producer and the customer, the Analysis Chemistry Department provides consulting services and useful instructions, in person or by telephone at any time, in order to satisfy the needs and requirements of the consumer, to achieve the best possible result during the production process, but mainly to ensure the quality and safety of the product.

Oenological

– Monitoring and control of the alcoholic fermentation process
– Monitoring and control of vinification – guidance
– Guidance on wine stabilisation processes
– Organoleptic control and assessment of the wines or their suitability for blending

Olive oil industry

Advice and instructions are provided on the proper handling of the olive fruit, both after harvest and at the mill, and the correct storage and preservation practices for the product. An organoleptic test is also carried out by Nikolaos Fakourelis and associates, with years of experience in olive oil tasting and evaluation.
– Instructions and information are provided for the design of the label in accordance with Greek and European legislation (detailed advice on the format etc.)

HACCP system

The HACCP (Hazard Analysis and Critical Control Points) system is a system for ensuring food hygiene. This system is a set of written working instructions and good industrial practice rules, which is different for each industry, craft or production facility, and must be monitored and adhered to continuously in order to avoid risks of food origin. The Analysis laboratory provides HACCP system design and implementation services, in the context of which it carries out a set of integrated laboratory analyses, with the aim of developing a system that includes both Good Industrial Practice and Quality Assurance elements. The necessary analyses are carried out with a view to eliminating any form of risk, preventing and optimizing the result obtained.
